Diofanor Ruiz has been perfecting his craft for nearly two decades, and it shows. After tasting his own coffee for the first time in 2005, Diofanor realised the potential of his farm and shifted from traditional farming to a quality-first approach - a move that changed everything.
Grown at La Divisa in the lush hills of Buenavista, Quindío, this washed Tabi lot is testament to his dedication. The cherries undergo 30 hours of underwater fermentation before being pulped and washed, allowing their natural sweetness and vibrancy to shine through.
Roasted for filter, it’s bright, crisp and effortlessly smooth. Think toffee apple up front, golden honey through the middle, and a clean, lingering finish. A beautifully balanced cup with just the right amount of sweetness and structure - a joy to drink.
