Tasting Notes: Cherry and Cacao Nibs
Sitio Canaã, which translates to “The Promised Land”, is a small farm just outside the town of Piatã owned by Kleumon Silva Moreira. Coffee grown here is unique and complex, often sweeping awards in the country’s Cup of Excellence competitions. Under the guidance of Antônio Rigno, the highly decorated owner of the farm São Judas, Kleumon purchased his own 10-hectare plot of land in 2016 and has since mirrored the precision and best practices of his mentor. As well as his own farm, Kluemon runs day to day operations at Silvio Leite’s Cerca de Pedra, and works closely with other farmers in the region to provide support and advice as they transition solely into specialty coffee production. Kleumon represents the next generation of coffee farmers in the region, and we are privileged to have been purchasing from him since the 2019 harvest.
Kluemon’s fastidious approach is evident in the quality of this lot. The ripest cherries are picked and dried steadily and slowly over 25 days in greenhouses, allowing fructose to build and remain in the fruit. Owing to its excellent body and structure we’ve roasted this for espresso, highlighting its juicy red fruit and cacao notes.
