We’ve been roasting coffee from Sitio Canaã for a few years now, and it just keeps getting better. The farm is owned by Kleumon Silva Moreira, a talented producer helping shape the next generation of specialty coffee in Piatã, Brazil. Kleumon learned his craft under the guidance of Antônio Rigno (of São Judas fame), and that same care and precision shines through in his own work. Sitio Canaã, meaning “The Promised Land”, is a small farm with big character, and this natural processed Arara lot is a standout. Roasted for filter, it’s mellow and clean, with gentle fruit sweetness and soft nutty depth. In the cup, expect notes of honeydew melon and roast almond, with a smooth, rounded finish. Subtle, structured, and quietly delightful.
