Tasting Notes: Pomegranate and Black Tea

Mbilima washing station is one of three owned and operated by the Dukunde Kawa Cooperative. The staggering elevations of the region contribute to the exceptional quality of coffee produced here, with cherries maturing slowly for high sugar development. Peaberry refers to the size and shape of the beans. A typical coffee cherry produces 2 seeds, however a peaberry is a cherry that produces only one. Smaller and more dense, these beans are full of flavour. This lot was sourced from 132 local members of the cooperative. The ripest cherries are pulped and fermented for 12-18 hours before soaking for 24 hours to remove the remaining fruit. Following this they are carefully hand sorted, with the peaberries separated at this stage, before drying slowly over 2 weeks until 11% humidity is reached. A testament to the hard work of Dukunde Kawa, this lot is vibrant and jammy, with tea-like florals and crisp acidity.
