Tasting Notes - Cherry and Dark Chocolate
This stunning lot was produced by Pedro Flores on his farm, “El Mirador”, in the heart of the Caranavi Province. The high elevations, rich soils and wide daily temperature variance of this region are ideal for coffee production. Pedro inherited the farm at just 14 years old, growing coffee alongside food crops to sell in the local market. Over the last decade, Pedro switched his focus to specialty, selectively picking and selling his top grade lots to the Rodríguez family at Agricafe as part of their Sol de la Mañana program. This initiative aims to improve infrastructure and farming practices to create a sustainable future for Bolivia’s coffee industry. Through the program, Pedro has not only improved quality, but significantly increased yields from just 6 bags per hectare to 30.
This coffee was processed at Agricafe’s Buena Vista mill. Cherries were dried for 48-72 hours on raised beds. Following this, they are transferred to Stationary or “Coco” Dryers, a machine used in cocoa processing, until they reach 11.5% humidity. These stainless steel containers supply a steady flow of warm air from underneath the bed, which combined with regular stirring, ensures slow and uniform drying. The result is a vibrant filter with excellent structure, bursting with juicy red fruit and chocolate notes.
