Neftalí Castro, Colombia
Best Suited for Espresso
Tasting Notes of Green Apple and Brown Sugar
This sweet and balanced microlot comes from Neftalí Castro and his family farm, El Diamante, just outside the town of Cajamarca in Colombia’s Tolima department. Neftalí manages the 30-hectare farm with his sisters, continuing a three-generation legacy of farming. This lot, La Locura, is grown on a unique plot where all of the farm’s varieties are mixed together under dense shade—creating a lush coffee forest that’s as wild as it is intentional. The coffee is washed, fermented for up to 72 hours, and carefully dried on raised beds, resulting in a clean, vibrant profile. Roasted for espresso, it’s crisp and sweet, with green apple acidity and a rich brown sugar finish. Smooth, approachable, and quietly complex—it’s the kind of coffee that’s easy to love.
