Tasting Notes - Mandarin and Toffee
This washed coffee was produced by Jamir Muñoz on his farm, Beunavista. Situated in the Huila department in the country's southwest, coffee here benefits from the cooler than average temperatures and high altitudes, leading to slow, concentrated sugar development. When asked what he would like the roasters who purchase his coffee to know, Jamir emphasised that working on the farm is the best thing he’s been able to do. Despite only being in his 30’s, Jamir has 15 years experience growing coffee, having learnt from his father. His passion is evident in this lot which has been processed with the utmost care. The ripest cherries are picked and pulped, before fermenting in tanks for 38-40 hours. The remaining fruit is removed, and the coffee is then dried slowly over 12-15 days on parabolic beds, similar to a greenhouse, until the optimum moisture content is reached. We’ve roasted it for filter, highlighting its syrupy sweet qualities and delightful citrus acidity.
