Tasting Notes - White Peach and Jasmine
This washed coffee comes from the Guji region in Ethiopia, known for its cool temperatures, rich fertile soils and high elevations which lead to complex and distinct flavour profiles. Jigesa is one of 10 washing stations owned and operated by Testi Coffee. This Kurume and Wolishi variety lot is a part of Testi’s quality improvement initiative, Premium Cherry Selection (PCS). Only the ripest cherries were carefully handpicked from 500 independent microlots in the area. These small farms are run by families, with coffee grown organically alongside food crops. After arriving at Jigesa, the coffee was processed according to Grade 1 standard; the highest quality in Ethiopia. Cherries are meticulously sorted by hand and in floatation tanks to remove unripe or damaged fruit. The cherries are pulped within 6-8 hours of harvesting, and then soaked in clean water for 36-48 hours to remove mucilage. The coffee is then washed and graded by density and soaked in clean water for another 12 hours, before being dried on raised African drying beds in the shade for 5-7 days. The result is a sweet and delicate filter coffee with sparkling white peach sweetness and a long jasmine tea finish.
