This coffee comes from the Guji region in Ethiopia, known for its cool temperatures, rich fertile soils and high elevations leading to complex and distinct flavour profiles. Jigesa is one of 10 washing stations owned and operated by Testi Coffee. This Kurume and Wolishi variety lot is a part of Testi’s quality improvement initiative, Premium Cherry Selection (PCS). Only the ripest cherries were carefully handpicked from 500 independent microlots in the area. These small farms are run by families, with coffee grown organically alongside food crops. After arriving at Jigesa, the coffee was processed according to Grade 1 standard; the highest quality in Ethiopia. Cherries are meticulously sorted to remove unripe or damaged fruit. They are then graded by weight and spread evenly on raised African beds to dry in the sun for 15-18 days, initially in thin layers and increasing after 25% humidity is reached. This ensures slow, even drying for optimum sugar development. With delicate florals, a juicy blueberry acidity and creamy chocolate notes, this filter is the perfect pick me up.
