Tasting Notes: Blueberry and Chocolate

This espresso was produced by the Borré family at their stunning Fazenda Progresso, nestled deep in the Chapada Diamantina mountain range. The Borré family embodies their motto, “Mindful Coffee”, extending their commitment not only to quality and innovation, but also to social and environmental responsibilities. We’re incredibly proud to have been working with them for more than a decade. 

Gandula is a passion project of Progresso's head of quality control, Ednaldo Nascimento. Ednaldo spent the harvest carefully curating this coffee, combining only the most vibrant and distinct lots. The high altitude of the region, coupled with cool overnight temperatures, plays a significant role in coffee quality. Slow cherry maturation allows for natural sugars to develop, resulting in a sweet and complex cup. The ripest cherries are handpicked by trained workers, then dried on raised beds with fruit intact for 14 days. This is followed by an additional 6 hours of drying in mechanical dryers at a temperature of 30-32 degrees. The result is a fruit-forward espresso, bursting with juicy berry sweetness and a rich, velvety body.
