Wilton Benitez, Colombia
This washed processed coffee comes from the renowned, innovative coffee producer, Wilton Benitez, in Colombia’s Cauca region. Typically specialising in the cultivation of exotic varieties at his farm, Finca El Paraíso-92, Wilton takes a meticulous approach to producing and processing coffee, and this Castillo lot is no exception. Though a comparably flatter growing region of the country, Cauca’s proximity to the equator leads to stable, humid conditions, and winds from the Pacific Ocean contribute to exceptional growth of coffee cherries. For this regional lot, Wilton sourced freshly harvested cherries from local farmers surrounding Finca El Paraíso-92, before taking them to his state of the art processing facility near Piendamo. Cherries were fermented for 36 hours, carefully depulped and slowly dried. The result is a vibrant cup brimming with crisp green apple and warm brown sugar, an excellent rendition of a classic Colombian filter coffee.
