This natural processed coffee was produced by Tarekech Werasa on her family farm, Banko Chelchele, located in the renowned growing region of Sidama, Ethiopia. In the past, it was rare to find Ethiopian coffee from a single producer. Fortunately, there has been a shift in traceability that allows access to Ethiopian coffees like Tarakech’s, and this one is pretty special. Banko Chelchele sits at a staggering altitude of 1,900masl. High elevations combined with a cool climate, iron-rich soils and shade from native forests all contribute to a slow cherry maturation process, resulting in a sweeter, more complex flavour profile. Tarakech and her family use a hands-on, organic approach to farming that relies heavily on manual labour. This coffee is classified as Grade 1, which indicates the highest level of care and attention to detail during processing. After the ripest cherries are hand-picked, they are carefully sorted to remove unripe, overripe or damaged fruit and graded by weight. The cherries are then laid on raised African beds and turned regularly until the optimum moisture level is reached. Tarekech takes great pride in her coffee and we are excited to be sharing this deliciously sweet espresso with you.
