A washed processed coffee from the department of Antigua, Guatemala. This lot was produced at Finca Santa Clara, one of three farms that are owned and operated by fourth-generation farmer Ricardo Zelaya. Santa Clara Estate is 90 hectares in size and is located in the fertile slopes of the Volcán de Agua, at 1,600-1,830 masl. Ricardo’s farms are very well-managed – from the careful selection of coffee varietals and attention given to plant nutrition, to the close supervision of the wet and dry mills, which are located on his estate. The Zelaya family are passionate about sustainability. The coffee plants are shade-grown, which protects the plants from direct sunlight and maintains soil health. Sedimentation tanks are used in their mills to prevent river pollution and all organic by-products are recycled and reused. Santa Clara Estate provides work for sixty permanent employees, with an additional 250-400 seasonal workers who help throughout harvest. Every cherry picked at Santa Clara is hand-selected and sorted before being inspected by a specialised team at the wet mill. This mixed varietal (Bourbon and Caturra) lot was pulped and fermented for 12-22 hours in tiled tanks. The beans are then washed to remove any remaining pulp and carefully dried on raised beds inside a greenhouse. Ricardo recently invested in a dedicated QC lab where every single lot produced on the farm is carefully cupped and analysed. This coffee has been roasted for filter and is a true testament to the meticulous care that has been taken during production. With a juicy acidity and creamy mouthfeel, you’ll want to sip on this one all day long.
