This washed processed coffee was produced by Robinson Pillimue and his family for their 1.5 hectare farm, San Francisco. Their farm is located in the municipality of Inzá, in the state of Cauca, southern Colombia. San Francisco has breathtaking views of Colombia’s highest volcano, Nevado del Huila. With an altitude of 1,900masl, coffee plants grown in this region thrive off cool temperatures and rich, volcanic soil. This Chiroso and Caturra varietal coffee was selectively hand-harvested by the Pullimue family and processed at their privately owned micro-mill. The cherries were manually pulped and placed in dry fermentation tanks for 48 hours, and then fully washed. The beans were carefully dried for 10-18 days on a concrete patio under a greenhouse-style canopy. Once dry, the coffee was delivered to Pergamino’s warehouse in Medellín, where it is cupped, graded and exported. An easy-drinking coffee that is fruit-forward with a rich, syrupy mouthfeel.
