This washed process 100% Chiroso lot is from Finca Lomaverde in the state of Antioquia, Colombia. Finca Lomaverde is owned and operated by the Echavarría family, who are well known for their positive impact across Colombia’s coffee industry through their extensive financial aid and scholarship programs for workers, as well as the roastery, cafe and exporting arm of their business; Pergamino. This coffee is a fine example of the family’s quality-focused production. After taking the top spot in Colombia’s 2020 Cup of Excellence, Chiroso has become a sought after variety thanks to its complex cup profile.
The rich soils, abundant water sources and incredibly high altitudes of 1,950 masl at Lomaverde are ideal for unlocking the potential of the Chiroso variety. To further concentrate these flavours, the Echavarría’s have enlisted their son Leo’s fermentation expertise to incorporate an extended fermentation period over 2 days, during which new pulped cherries are added to the previous day’s pickings to balance pH levels. The coffee is then dried in temperature controlled conditions over 3 days. This coffee makes for the perfect espresso, thanks to its silky smooth mouthfeel, nut forward qualities and citrus sweetness.
