This mixed variety lot was carefully produced by small-scale independent coffee growers in Dipilto. Owing to its biodiversity, high elevations, fertile soils and varying microclimate the region is renowned for its specialty coffee production. This lot was predominently grown under the shade of pine forests in the Cordillera nature reserve, leading to slow maturation times and optimum sugar development. Farmers hand pick the ripest cherries each day during harvest and pulp them on site at their own wet mills, before they are fermented for 22-32 hours with mucilage attached. The coffee is then washed and sent to Caravela Coffee’s La Estrella mill where it is dried slowly over 2 weeks. Comfort in a cup; the rich, nut-forward qualities of this coffee are balanced with a juicy apple acidity. Enjoy using your favourite filter method.
