This washed coffee comes from the Guji region in Ethiopia, known for its cool temperatures, rich fertile soils and high elevations resulting in complex and distinct flavour profiles. Jigesa is one of 10 washing stations that are owned and operated by Testi Coffee. This Jarc 74112 varietal lot is a part of Testi’s quality improvement initiative, Premium Cherry Selection (PCS). The very ripest cherries were carefully handpicked from 850 micro-lots within the area. These small farms are run by families, with their coffee grown organically alongside food crops at a staggering 1,900masl. After arriving at Jigesa, the cherries were processed according to Grade 1 standard, the highest quality for Ethiopian coffees. Sorted by hand in a floatation tank, the densest, sweetest cherries are pulped and soaked for 36-48 hours. They are washed and sorted by weight again, before soaking for a further 12 hours. Dried over 10-12 days, the cherries are covered periodically to protect them from direct sun and overnight dew, and turned by hand to ensure a slow, consistent drying process. This coffee has been roasted for espresso to highlight its big, juicy sweetness and delicate florals.
