This washed processed microlot was produced by Javier Rubio on his farm, El Libano. Situated in the Gaitania region of central west Colombia, El Libano is 5 hectares in size and sits at an altitude of 1,600masl. High elevations, volcanic-rich soils and stable temperatures all make for ideal coffee growing conditions. Javier follows strict harvesting practices, picking only the ripest cherries before sorting them by hand in a floatation tank to remove any defects. The cherries are then fermented underwater for 30 hours before they are depulped. Following this, they are washed of any remaining mucilage and dried slowly in temperature controlled conditions until the ideal moisture content is reached. We’ve roasted this one for espresso to highlight its dried fruit sweetness and red apple acidity.
