A natural processed coffee from the renowned coffee growing region of Sidama, in Ethiopia’s Guji zone. Hadeso is one of ten washing stations that is privately-owned and operated by Testi Coffee, meaning ‘happiness’ in their local language. During harvest, Hadeso receives coffee cherries from between 650-750 local, independent farmers who operate organically farmed, micro-plots within the region. With cool temperatures and average elevations of 2,000masl, coffee cherries ripen slowly here, resulting in sweetness and complexity. This Jarc 74112 varietal lot is a part of Testi’s quality improvement initiative, Premium Cherry Selection (PCS). This program ensures that only the best practices are used throughout growing, harvesting and processing. Each day, hand-picked coffee cherries are delivered to the wet mill and are meticulously hand-sorted prior to processing to remove unripe, overripe, or damaged fruit. The coffee is then graded by weight and spread evenly on raised African beds to dry in the sun for 15-18 days. The cherries are turned regularly and are covered at midday to protect them from full sun. A whole lot of love and a tonne of hard work has gone into processing this beautiful coffee. With delicate florals and a wildly juicy flavour profile, this coffee has been roasted for filter.
