This incredible microlot was selected from Fazenda Progresso, a beautiful farm nestled in the Chapada Diamantina mountain range, located at the heart of Bahia. The Borré family, who owns the farm, takes great pride in their commitment to excellence, innovation, and environmental and social responsibility, which is embodied in their motto, “Mindful Coffee”. The farm’s Head of Quality Control, Ednaldo Nascimento, meticulously curated this lot, which was directly acquired by the Redbrick team during their origin trip last year.

 

The cool overnight temperatures and high altitudes of the region provide ideal conditions for sugar development in coffee cherries. Handpicked by a specially trained team at the peak of ripeness, the cherries are then dried with fruit intact on raised beds over 14 days until 14% humidity is reached. Following this, the coffee is dried for a further 6 hours at 30-32 degrees in mechanical dryers until it reaches 11% humidity in order to create lasting quality in the cup. The result is a fruit-forward espresso with a bright citrus acidity, big-bodied flavour and a smooth, nutty finish.
