A washed process coffee from the municipality of Inzá in the state of Cauca, Colombia. This lot was produced by Leonel Calambás and his family on their micro farm, El Jardín. Don Leonel, as he is known around town, has been working in coffee his entire life and his seven children have all followed in his footsteps. El Jardín, which translates to “the garden” is 1 hectare in size and sits at a high elevation of 1,972masl. Cool temperatures, heavy rainfall and rich, volcanic soil all make for ideal coffee growing conditions. Cherries mature and dry slowly here, resulting in sweetness and complexity. This Caturra and Colombia varietal lot was selectively hand-harvested and processed by Don Leonel and his family at their micro-mill. The cherries were manually pulped and placed in fermentation tanks for 48 hours, before being fully washed using clean, local river water. The beans were then dried on greenhouse parabolic beds for 10-18 days. The greenhouses are constructed out of plastic sheets and have adjustable walls to help with airflow and temperature control to ensure the coffee is dried slowly and evenly. Once dry, the coffee was transported to Pergamino’s warehouse where it was cupped and graded before being exported. With rich, jammy sweetness and lingering chocolate finish, we’ve roasted this coffee for filter.
