We are excited to be sharing a very special pulped natural processed coffee produced by our dear friend and coffee mentor, Silvio Leite. Our team was fortunate enough to visit Silvio and his beautiful farm in August of this year.

With over three decades of experience and dedication, Silvio is a true leader in specialty coffee and has played a pivotal role in shaping specialty coffee, both in Brazil and globally. Silvio is incredibly humble, with a genuine passion for both coffee and the people within the coffee industry. In 1999 he co-founded the Cup of Excellence (COE) and co-authored the technical protocols for the COE. Silvio’s purchase of his first farm, Fazenda Cerca de Pedra São Benedito in 2019 was the realisation of a career-long dream to produce his own coffee. Not only is the coffee produced here delicious, Silvio and his team also use the farm as an educational reference for many small producers in the region. Cerca de Pedra São Benedito sits at an altitude of 1,270masl and is located in Piatã, Chapada Diamantina; a privileged coffee growing region. High elevations and cool temperatures year round contribute to a longer maturation process, leading to a higher sugar concentration. Typically, coffees grown in this region are sweet, floral and complex and this lot is no exception. 

This Red and Yellow Catuaí varietal lot was carefully hand-harvested by a group of locally trained women known as “panhadeiras de cafe”. The cherries were pulped and dried in greenhouses with their mucilage still attached. The beans were spread in layers of about four centimetres and turned several times a day. At this stage, the coffee is practically left in the shade, as this slows down and extends the drying process, leading to higher fructose levels. The beans were then separated into numbered lots before further processing. This rich, syrupy espresso has a lingering citrus acidity and is a true testament to Silvio’s passion and dedication.
