This stunning microlot was produced by Carmela Aduviri and her sons, Elvis and Luis, in the hills of Copacabana in Bolivia’s Caranavi province. Over recent years, through participation in Agricafe’s Sol de la Mañana mentorship program, the Aduviri family have significantly improved their infrastructure and farming practices allowing them to make a living off of their top grade lots such as this one. The high elevations, rich soil and wide daily temperature variance of this region further contribute to this filter’s exceptional flavour. Carmela and her family handpick and carefully hand polish only the ripest cherries, before delivering them by taxi to Agricafe’s Buena Vista mill. Cherries are dried with fruit intact for 11 days on raised beds with turning every hour, before being transferred to a Stationary or “Coco” Dryer, a machine used in cocoa processing, until it reaches 11.5% humidity. These stainless steel containers supply a steady flow of warm air, which combined with regular stirring, dries the coffee slowly and evenly. The result is a coffee bursting with vibrant berry sweetness and a sparkling acidity, with balanced chocolate notes. Enjoy using your favourite filter method.
