This washed process coffee was produced by Carlos Enrique Posada in La Palma, El Salvador. Coffee is a family affair for Carlos, with his own farm, San Carlos II, being named after his fathers. Utilising the skills he had learnt from growing up in the industry, Carlos made the switch from artisan metalworking to specialty coffee to improve his family’s quality of life and employ more people in the area. San Carlos II sits at an elevation of 1,375masl and has a cool climate year round. Carlos believes what makes his coffee so special are the good practices they use and the love and passion with which they work. This coffee is made up of his favourite varieties, Yellow Catuai, Yellow Pacamara. and Red Pacamara. After being depulped and fermented for 24-36 hours, the cherries are dried for 12 days on raised beds. Rich and syrupy sweet, brew however you like for a full-bodied cup.
