This natural processed lot was produced by Ayele Begashaw and his family on their beautiful farm, Aricha. Located in the region of Yiracheffe, Aricha is 4 hectares in size and sits at a staggering altitude of 1,900masl. High elevations, mild climates and mineral-rich soils all contribute to this region’s renowned coffee growing environment. Yiracheffe is famed for the fruit-forward, aromatic coffee it produces and this coffee is no exception. This mixed varietal lot is made up of JARC 74110, 74112, and 74165, which were selectively bred in Ethiopia from local heirloom varieties to further improve their quality potential. Processed to the highest Grade 1 standard, this coffee was handled with great care and attention to detail. Only the ripest cherries are hand-picked and sorted to remove unripe, overripe or damaged fruit. Laid out in the sun on raised screens, the cherries were turned regularly until the optimum moisture level was reached.
