From the Guji growing region of Ethiopia, this washed lot is made up of JARC 74112 and 74110 varieties from approximately 650-750 independent producers in the Aroresa woreda. The majority of these lots are from families that farm organically on small plots of around 2-5 hectares, with coffee grown alongside their food crops. The average elevations of 1,950-2,150masl combined with cool temperatures ensures the slow ripening of cherries for a complex cup profile. This coffee has been processed at Testi Coffee’s Ayla washing station to Grade 1 standard, the highest of Ethiopian coffees, indicating a great deal of attention has been put into selection and grading during processing. The ripest Cherries are carefully hand picked through Testi’s Premium Cherry Selection initiative, and delivered daily to the washing station. They are sorted and then pulped, before grading by weight to ensure the densest, sweetest cherries are used. The cherries are soaked for 36-48 hours to ferment and detach the mucilage. The coffee is then washed and soaked in clean water for a further 12 hours. It is dried for 10-12 days, with regular turning and further sorting by hand and covered overnight and during the hottest parts of the day to ensure slow, even drying for concentrated flavours. This coffee is ridiculously sweet; we’ve roasted it for filter to highlight the delicate tea-like qualities and juicy peach flavours.
